If you’re like me, you need no excuse to consume ice cream or lollies and will happily do so even in the depths of winter.
However, if you are a bit odd and only like to munch on frozen treats in the summer, then here is a super simple recipe to keep you cool in the heat (if the sun comes back out that is…).
Peanut & Coconut Popsicles
Firstly, collect your ingredients. I used a can of whole fat coconut milk, 2 tbsp of peanut butter (make sure there is no palm oil!) and some agave nectar.
If you don’t have agave nectar you could use honey or maybe a pinch of sugar. Or if you are one of the lucky ones who doesn’t have much of sweet tooth, skip the sweetener altogether.
Then all you have to do is mix everything really well together:
Then pour in to your lolly moulds and freeze overnight. Finito!
If you wanted to be really adventurous, you could remove the frozen lollies, dip them in some melted chocolate and return to the freezer for a short while – extra indulgence!
There are some other exciting ideas for popsicle/lolly flavours here if you fancy getting even more experimental.
Just be careful you don’t get mauled down when arriving to a bbq with these in hand…

Yum! I agree, only eating ice cream in summer is a ridiculous idea! Is about 30 degrees here in the midlands today, so may have to mosey on down to buy some lolly moulds 😉
